This weekend I haven’t been able to stop thinking about chocolate… I blame Easter, seeing my kids surrounded by Cadbury’s eggs – and the fact that I love chocolate and it is the one thing, along with cheese, that I still crave. As I follow OMS, ‘normal’ chocolate is off the menu, so finding recipes that satisfy the craving is the holy grail.
This weekend, I have made this Raw Chocolate Caramel Dip from Forks Over Knives – delicious with strawberries and banana dipped in it. Then, this morning, I made home made nutella, using a recipe from Fab Lunch – it was so easy!
First, I roasted 200g of hazelnuts by putting them in the oven for 20 minutes on Gas Mark 4. I then took off as much of the hazelnut skin as I could by rubbing the hazelnuts in a clean tea towel.
Next, I added the nuts to our food processor (we have a Magimix) and whizzed it up for about 10 minutes or so, scraping the sides down a few times, until it became a runny nut butter. A tablespoon of dairy free cocoa, a couple of tablespoons of maple syrup and some water, another quick whizz and hey presto! home made nutella.
I love nutella on anything – crumpets, toast, pancakes. When I was pregnant, a staple breakfast was a cinnamon raisin bagel with lashings of nutella (along with crisps, cake, ice-cream…). But, to be honest, my favourite way is simply eating it off a spoon. At least it means very little washing up…. plus I can be sneaky so the kids can’t see me taking spoonfuls from the dish.
