It was my birthday on Friday and I had THE BEST chocolate cake – 100% OMS friendly – low in saturated fat, dairy free, vegan. And yum. I mean seriously yum.
This is the third year in a row that I have had this cake for my birthday and I’m not complaining. It tastes rich, decadent and naughty, which is how every good cake should, in my opinion. Yes, there’s sugar in it, and no, it isn’t gluten free, but it ticks all the boxes for adhering to the OMS diet, which is what I stick to to try and keep myself as healthy as possible. The recipe is from the OMS website, and here it is without further ado:
Ingredients:
Cake
1 1/4 cups self-raising flour
1 cup brown sugar
1/3 cup unsweetened, pure cocoa powder
1 tsp baking soda
1/2 tsp salt
1 cup warm water
1 tsp vanilla extract
1/3 cup extra virgin olive oil
1 tsp distilled white or apple cider vinegar
Icing
½ cup icing sugar
1/3 cup pure cocoa powder
2-3 tbs warm water
Directions:
Preheat the oven to 180C/350F. In an 8X8 square pan/dish, mix together flour, sugar, cocoa, baking soda, and salt with a fork, making sure it is really blended together. Add the water, vanilla, oil, and vinegar, and again, mix together so that it’s really blended together. Use a spatula to scrape down the sides if necessary. Will be quite watery.
Place in oven and bake for about 30 minutes, or until a knife comes out clean. Cool on a rack completely (2 hours).
For icing, slowly mix warm water with dry ingredients to get desired consistency.

Yes, it is so good! My husband made two batches and put them together for my birthday but one batch is enough for 12 little cupcakes. I sometimes add a spoonful of espresso powder to the sponge and/or icing to make it richer – my kids prefer the pure chocolate though! Xx
